Pozole

I am working on some pozole. Here's what I have so far:

.99 lb Pork Spare Rib Tips
1.22 lb Pork Neck Bones
Water to Cover

6 cloves garlic
Bouquet Garni (Cilantro and Thyme)
Bay Leaf
.5 White Onion
3 Red Anchos
About 1 T. Ground Cumin
About 1 T. Mexican Oregano
Half an old Jalepeño, cut up

1 can Pozole

Bring the first three ingredients to a boil, skim. Lower heat, continue cooking at a simmer, half covered, between the time when when Kurt Anderson is talking about Andy "Drella" Warhol, until Claude Brodesseur stops talking about Ron Howard's Movie "Cinderella Man."
Add all additional ingredients, EXCEPT pozole, cook until Krista Tippets stops talking about Einstein.

Take picture,

Turn off heat, pour into a tupperware to finish tomorrow.

(remember to cool in sink for the time that Joe Frank is talking to Larry Block before putting in the refrigerator.)
